Oh mylanta. What have I done?
If I’m not mistaken, that’s a ball of cookie dough surrounded by a fudgy brownie and then coated in chocolate and sprinkled with mini chips.
Whoooa.
Sometimes, I don’t even know WHERE half my ideas come from. I literally operate like a mad scientist part of the time, throwing things together with my fingers crossed, hoping it’ll work. Sometimes it does, like in this instance. Other times, like when I tried to put Jello mix into prepackaged sugar cookie dough and it tastes like a chalky version of Play-Doh and I stared at Pinterest like all disappointed because it let me down with those tempting Jello-cookie recipes that taste like poop, it doesn’t.
Most days, you can find me scatterbrained and roaming the grocery store like a complete looney tune. I’d love to see the surveillance footage of me wandering aimlessly between the candy aisle and baking aisle, discussing to myself in a low whisper of what I could do with this bag of Reese’s cups as I run around like not only a chicken with its head cut off, but if it was also on fire and having ninja stars thrown at it from every direction. Is it just me, or does the prospect of ninja stars being thrown at you totally increase the intensity of something?
Lucky for me, I usually shop at a store that may or may not rhyme with Schmalmart, and the fact that I’m aimlessly walking back and forth while talking to myself isn’t really that out of the ordinary. The bad news is I’m proooobably going to bet my psycho face staring longingly/confusingly into a box of red velvet cake mix is more than likely on People of Walmart or something. Ya win some, ya lose some.
Anywhooooo, the idea for these truffles came from left field. I had a bunch of St. Patty’s Day recipes I wanted to make this weekend, and out of nowhere, a huge zeppelin of awesome floated into my brain and interrupted whatever I was doing at the present moment, which probably wasn’t important since I’m either reading trashy magazines or judging customers at work for ordering mayo and lettuce on hot sandwiches (it’s a NO, people–hot mayo? wilted lettuce? You need an intervention).
And this zeppelin dropped a gigantic bomb of brilliance on me: wrap a brownie around a ball of cookie dough. Then coat said ball in chocolate. And voila, this cataclysmic invention was created. You’ll never enjoy brownies or cookie dough respectively, again. This is the ultimate.
Now pardon me, but I have some reading/judging to do and it’s VERY important.
- ¾ cup butter, softened
- ¾ cup brown sugar
- ¼ cup white sugar
- 2 Tbsp milk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- Pinch salt
- 2 cups miniature chocolate chips, divided
- 1 pkg fudge brownie mix, baked and cooled
- 1 pkg Candiquik or chocolate almond bark
- Let's make some dough! In the bowl of a stand mixer, beat together the butter and sugars until creamy. Add the milk and vanilla; beat to combine. Lastly, beat in the flour and pinch of salt until a soft dough forms. Stir in ONE (1) cup of the mini chips.
- On a foil-lined baking sheet, drop rounded, (scant) Tablespoon-sized balls of dough. I used a cookie dough scoop for this and just scantily filled it so the cookie dough balls wouldn't be so big. Freeze the cookie dough balls for about an hour to firm up.
- Cut the brownies into small squares, about 1" in size. Pick up a square and gently flatten it with your palm. Fudgy brownies will flatten easily and retain their moisture which is why it's important to make sure you use a fudgy brownie mix rather than a cake-y one.
- Place a cookie dough ball in the middle of the flattened brownie and very gently, wrap the brownie around the cookie dough ball. If the brownie cracks, that's okay; just kind of roll it in your fingers until the brownie completely surrounds the cookie dough. Repeat until all cookie dough balls are covered, then return to the freezer for 30 minutes or so.
- Prepare chocolate bark according to package directions. Using a fork, dip each brownie truffle into the chocolate, coat completely, and allow excess to drip off. Return to the foil-line sheet and sprinkle the tops with the remaining cup of mini chips, for garnish. Store these bad boys in the fridge or freezer, in an airtight container.
- **Note: You may have extra balls of cookie dough leftover. May I suggest making cinnamon rolls or stuffed Oreos? Or, uh, eat them? Why am I telling you what to do with cookie dough?**
Talk about the ultimate indulgence. Sometimes, the decision between fudgy, gooey brownies or chewy, buttery chocolate chip cookies is one I’m not willing to make. It’s not fair to either rejected party when I both want them so equally, and love them both so much. So I fixed the problem with a decadent chocolate/cookie dough bomb that melts in your mouth and tastes AWESOME. The cookie dough remains soft and gooey, while the chewy brownie provides the perfect blanket of rich chocolate. In other words, they’ll change yo life.

And I’m totally a person that would order mayo and lettuce on a toasted sandwich. It’s quite possible the sandwich would only be cheese, lettuce, tomato, and mayo– if that’ll gross you out even more. I dont warm mind warm mayo (less gross to me than warm italian dress, BLECH) and lots of lettuces take well to wilting, like spinach 😀

You always bring a smile to my face when I read your blog post for the day. I am equally as crazy when I wander the Supermarket aisle’s. Hey Hayley! I have a quick question…about how many “bombs” can I get from this recipe? I have a birthday party that I’m attending to in a couple of weeks and think these would be a great hit! Hi Bianca! If I remember correctly, I believe I got about 15-18 bombs out of these. You could always make the cookie dough balls smaller and cut the brownies smaller, too, to help cut down on size. I’m sorry I can’t give an exact amount–I meant to record it when I made them a couple weeks back but forgot!

I saw the 15-18 and was making them for a big party. I doubled the recipe and made about 90! I got about 45 1″ brownies from one 9×13 pan and had 25 cookie dough balls left over. I did use the edge and corner pieces. Just be careful not to over bake the brownies so the edges are really hard and then unusable.

Hi Mae, this made about 15-18 brownie bombs. You can always roll the cookie dough out smaller and cut the brownies smaller to make more, or larger for bigger bombs 🙂

thank you so much for inventing this wonderful recipe. I made these last night but put my own spin on them I dip them in dark chocolate instead of the chocolate bark and I put walnuts in the brownies and instead of sprinkling the chips on top I rolled them in mini chocolate chips and pecans. those things are insane! These look amazing. Making them for a date this weekend. I am an accomplished baker; however, am having trouble with the dough recipe. It is coming out very, very dry. Like powder more than anything else. My butter was super soft. So, I’m wondering did you pack the brown sugar? Because this tastes super sweet. Also, the liquid amounts are in teaspoons, not tablespoons, correct? I realize you are doing this without eggs, but where is the moisture coming from? Or did you kind of have to smoosh the balls to hold together? Help please! Thanks!

Hi Kathy! So I used a softened, or room temperature butter. Just soften a cold stick in the microwave for about 10-15 seconds, then proceed. I realize my mistake now–I put two TEASPOONS of milk when it should be TABLESPOONS. I’ll fix it ASAP! That should alleviate the problem with the dry dough, but if it’s still a bit stiff, add a little bit more milk at a time. Hopefully this fixes the problem!

Well, I couldn’t wait, so before I received your reply, I started messing around. Trial 2 came out much better. I ended up using shortening (Crisco), and 2 Tablespoons of milk and 1 Tablespoon of vanilla. SUCCESS! Woo hoo! Can’t wait till they are done. Nom nom!

Hi Jen! So for salted caramel, you could always stuff your cookie dough ball with a piece of salted caramel or a Rolo–just wrap the cookie dough around the candy and you’ll have a candy surprise inside! As far as dulce de leche goes, I’ll have to look into that!

Hi Bonnie! Yes, however, I don’t like using chocolate chips only because they have a higher tolerance of congealing if they’re accidentally overcooked. But in a pinch you could absolutely use them!

If you use melted chocolate chips, add some shortening when you’re melting it, a few TBSP will do, it makes it a bit smoother when you dip them, and they still harden.

Hi Steve! You could always use chocolate chips or a bar of baking chocolate! Just be sure to watch it carefully while it melts, as chocolate chips tend to burn quicker than melting chocolate.

Hi Misty! So you cook the brownies, let them cool, then cut them into small squares. While they’re cooling, you can prepare your cookie dough — just the dough, and freeze the cookie dough balls until firm.
Then, when the cookie dough has firmed up and the brownies are cut and cooled, take a square of the brownie and gently smoosh it in your hand to flatten it. Wrap that flattened brownie around a cookie dough ball to cover it completely. THEN dip that brownie-covered-cookie-dough in chocolate 🙂 hope this clarified for you, darling! 🙂

Hey Andrea! So I cut around the edges (since they’re usually crispier and won’t mold around the cookie dough well), but otherwise, I got approx. 15-18.. sometimes, you may need to pick off a little piece of another brownie bite to help cover, but the 1″x1″ squares should cover them pretty closely as is. You shouldn’t really have any brownies leftover!

Hi Emma! So Candiquik/Almond Bark is basically a chocolate meant to melt. Unlike chocolate chips, which have a tendency to scorch easily, chocolate bark has a higher burning point so it’s less susceptible to burn. Hi Betty! Absolutely — use your favorite recipe for fudge brownies, whether it’s store-bought or homemade! I recommend the fudgy brownies because they’re tackier than say, a cakey brownie. The moistness of the fudgy brownie adheres to the cookie dough better 🙂 can’t wait to hear how you like them!

Chellie, you could, but I should advise you that you technically *could* be at risk because you’re eating raw eggs. My dough is eggless so it cuts that risk. But if we’re being honest, I have eaten premade cookie dough MANY times–and egg-y dough–and haven’t been sick. That’s just me, though! Use your best judgment 🙂

Astrid – I have a hard time making GF desserts that don’t crumble too much. My brownies are vegan and incredibly moist and fudgey. I haven’t made the brownies GF yet, but do a lot of GF baking in general. Why not try out this recipe of mine and see how it goes?
2/3 cups sorghum flour
2/3 cups brown rice flour
2/3 cups tapioca flour
2 cups sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cups water
1 cup vegetable oil (I use canola)
1 teaspoon vanilla extract
½ teaspoon almond extract (optional but so good)
Directions:
Preheat to 350F.
In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil, vanilla and almond; mix until well-blended.
Spread evenly in a 9×13 inch baking pan. Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. I always check it then but need to let it cook about 40 minutes total. The first time you make this, start checking at 25 minutes.

Hi Marianne! Candiquik is a melting chocolate used to coat goodies, like these bombs 🙂 it has a higher melting point so it is less prone to scorching when heated. You can use any good quality chocolate in place of Candiquik; just make sure you melt it nice and slow so it doesn’t scorch!

Though I love the wrapped cookie dough idea, I have to disagree with your hot lettuce comment. Apparently, you’ve never been delighted with a hot lettuce and bacon dressing (Pa Dutch favorite!) on the holidays. You really should try it sometime. You’ll never look at that icky, warm, wilted lettuce the same again. As for warming lettuce on sandwiches? If it’s got bacon or any other good hard-core tasting meat? By all means, heat it up! Hi Jessica! Mine usually have somewhat of a base, too — they aren’t completely round! What I find it using a fork to dip them works best. Allow the excess chocolate to drip off into the bowl, and gently scrape the bottom of the fork against the sides of the bowl to get that extra bit of chocolate off the fork and truffle. Then very carefully slide it onto your baking sheet to set. You could also stick a toothpick in between the tines of the fork to help scootch the truffle off 🙂 hope that helps!

Hey Samantha! So sorry you had issues with your brownies! The only thing I can think of about the brownies falling apart would be A) they weren’t cooled all the way (hot brownies tend to crumble easier), B) they were slightly over-cooked (if they were drier it’d be hard for them to stick together), or C) maybe the brownie-coated cookie dough didn’t get frozen. After wrapping the cookie dough in the brownie, I recommend freezing the uncoated brownie bomb for about 20-30 minutes to firm up together before coating. Assuming your brownies were cooled, super fudgy and you froze them prior to dipping, I’m sorry but I don’t know what else it could be! Sorry you had issues with them, though! 🙁

Just made the cookie dough (multiplied by 3) and rolled it into 99 dough balls (probably would have gotten at least 100 if my husband would have stopped eating my dough!). Put the balls in the freezer. Tomorrow’s job, making brownies and rolling each ball with a brownie. Looking forward to the finished project!!!

I made these for family Christmas and people really liked them, but the major complaint they were too sweet and too rich. When I made a second batch for my husbands coworkers today, I added a pinch of salt to the almond bark, and instead of sprinkling with chocolate chips, I used coarse sea salt. They were MUCH better the added salt balanced the sweet brownie and cookie dough and enhanced to chocolatr. If you don’t like the gland in your throat to throb after eating one and having to chug a bottle of water, add a little more salt to it

Hi Wendy, a lot of people have no adverse reactions to eating raw flour, me being one of those people. I feel like you’d have to eat a lot of raw flour to get sick – like, the entire batch of these, perhaps – but I’m not a dietitian so I can’t say for sure. However, you can always substitute a nut or oat flour, or organic flour, or cook your flour, in place of the raw flour. Just use your substitute flour in equal parts.

Recipe sounds good but I will make brownies from scratch. All those mixes have soy. Allergies you know. Yes, we have the ones that make us sneeze but we also have food allergies. I find altogether too many recipes that call for mixes or premade, I wonder sometimes what happened to the basic cook. I have always cooked/baked from scratch even though I worked full time my whole life. This is the type of recipe I like to find.

Hi Jacqueline, I cannot give you an answer for that. Store-bought cookie dough (like the refrigerated kind) runs the risk with salmonella since it contains raw eggs. Personally, I have never had an adverse reaction to eating raw, store-bought dough but everyone is different. It will not affect the finished taste of the product and it will still taste fine, but as far as if you’re willing to risk it, that’s up to you 🙂

I made these for the first time and they were amazing! I would up getting about 45 cookie dough bombs in all. Though I would recommend that you make 2x the brownie mix. I found that I had excess cookie dough balls and not enough brownie. Not that excess cookie dough is ever a problem!
