You guys!I’m finally expanding my blog to include some drinky dranks. I figured that my blog was severely lacking in the sweet beverage department and I needed to remedy that STAT. Sometimes, a perfectly chilled, bold fruity beverage is the exact thing you need to curb a craving or to top one off 🙂 Today I’m super excited to announce I’ve teamed up with Sparkling ICE for this post, featuring their naturally flavored sparkling waters.

These sparkling waters have tons of flavor, are just fizzy enough, and taste great! They’re made from natural spring water so they taste fresh, and they come in 17 real fruit flavor combinations like Coconut Pineapple, Strawberry Lemonade, Cherry Limeade, Orange Mango, Kiwi Strawberry, and more! You’ll love them if you haven’t tried them already! They’re the perfect base for these Pina Colada Bellinis, which by the way, aren’t really bellinis but are kind of like them, so there! But they remind me of the virgin strawberry daiquiris and pina coladas I used to order all the time at restaurants.

As a child I’d order up a virgin pina colada because I loved the taste and how frosty it was. These remind me of an adult version of that and are every bit as good but just lighter in calories and more natural than the mix most restaurants use. And if you feel so inclined to make these non-alcoholic beverages for yourself, feel free! There’s plenty of fizz from the Sparkling ICE and tons of flavor otherwise. You won’t even know the champagne is missing!

I totally see you guys drinking these next to a pool, beach, or the sprinklers, on a day where the temps are a little higher than normal. Wide brimmed hats are optional, but recommended. It’s the perfect ice-cold beverage to enjoy in the sun. Or to enjoy wherever you please, because they are a must.

Pina Colada Bellinis

This freezy-cool Pina Colada Bellini is flavorful, sweet and juicy! Feel free to leave out the alcohol completely if you'd like to make it kid-friendly, or sub in another alcohol (like rum or vodka) if you're feeling frisky.

Ingredients

  • 2 cups frozen pineapple
  • 3/4 cup simple syrup
  • 3 oz sugar-free coconut syrup like by Torani
  • 2 bottles (34 oz total) Sparkling ICE Coconut Pineapple Water
  • 3/4 cup champagne or more or less to suit your taste
  • Pineapple wedges for garnish, optional

Instructions

  • In a blender, puree the frozen pineapple, simple syrup and coconut syrup together until smooth. Set aside.
  • In a large pitcher, combine the Sparkling ICE waters and champagne; gently stir to combine.
  • Pour the pineapple slush mixture among four glasses evenly; top with the champagne mixture. Serve with a pineapple wedge on the glass.
