No-Bake Cookie Dough brownie Bombs arranged on wood with mini chocolate chips

 

A couple days ago, my dad wanted me to make some more of my Chocolate Chip Cookie Dough Brownie Bombs but it was creeping on 100 degrees outside and I was not about to turn on that oven. But then it hit me: I could totally make no-bake bombs with a couple of simple ingredient swaps. And thus, these No-Bake Chocolate Chip Cookie Dough Brownie Bombs were born.

These little fudgy wonders are what sandwich the cookie dough filling and make the bombs extra rich and special. Pure deliciousness!

Now, who’s ready for any excuse to eat these?!

No-Bake Chocolate Chip Cookie Dough Brownie Bombs

These No-Bake Brownie Bombs come together in minutes and taste like the original, without ever having to turn on your oven! Genius!

Ingredients

  • 3 pkgs (about 42-count total) prepared fudge brownie bites (find these in your store's bakery section)
  • 1½ packages Chocolate CandiQuik
  • 3/4 cup butter softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 Tbsp vanilla
  • 2 tsp milk
  • 2 cups all-purpose flour
  • Pinch salt
  • 1½ cups mini chocolate chips divided

Instructions

  • First, make your dough: in the bowl of a stand mixer fixed with the paddle attachment, cream together the butter, brown sugar and white sugar until creamy, about 2 minutes. Beat in the milk and vanilla. Lastly, beat in the salt and flour until a soft dough has formed. Stir in ONE (1) cup of the chocolate chips.
  • Take a brownie bite and place a rounded Tablespoon of dough on top of the brownie bite. Gently sandwich with another brownie bite, forming a sandwich. Place on a foil-lined baking sheet and repeat with remaining sandwiches. There should be about 20-21 total. Pop in the freezer for about 30 minutes - 1 hour or until firm.
  • Once firmed, melt the CandiQuik according to package directions until smooth. Dunk each brownie bomb into the CandiQuik, coating it completely with the chocolate, and return it gently to the foil-lined baking sheet. Top with the chocolate chips.
  • Allow chocolate to harden before serving. Store leftover bombs in fridge for about 3 days, or in freezer for about 1 month.

    Hayley – Loud, dramatic sneezers are the worst! I heard that California is wild right now with the drought. I’m sorry about that! Hopefully things will get better. I’ll do a rain dance for you. Brownie bombs…these look wonderfully addicting.

    HAHA my mom totally sneezes like this! I was like laughing out lout reading it because I always yell at her for sneezing so loud! I’m like you don’t need to sneeze with your voice… It’s like people who yawn with thier voice…so annoying. I want to eat all this cookie dough right out of the bowl! Yum!

    Sadly, I sneeze like that and my mother did before me. If anyone can explain how to dial it down, I would be really appreciative because it is embarrassing and I always want to crawl under a rock…:(

    My husband is the loudest sneezer EVER!!! It scares the crap out of me. There is no buildup. He’s like a silent killer. Nothing and then BOOM EXPLOSION. << kind of just like these brownie bombs. Except a good kind of explosion.

    My husband tries his damnedest to hold in his sneezes. He ends up sounding like a mouse. It’s weird coming from a six foot, 300-lb guy. Yeah, we’re all going to need these no-bake bombs soon. I refuse to turn on the oven when it feels like the desert outside. Pinned.

          Hi Denise, I get them at Smart & Final, Walmart, Safeway, Target sometimes has them… they’re usually the brand of whatever store I’m at.

    I would love to know what Chocolate CandiQuik is. I have never heard of it. Please let me know, if I can’t get it I will have to find something comparable.

      Hi Kristi! Candiquik is a melting chocolate that melts at high temperatures without seizing, unlike regular chocolate. You can find it at Walmart and Target, often under the name ‘almond bark’. If you can’t find it, feel free to substitute chocolate chips, melted low and slow until smooth 🙂

    Hi there.. for a chocoholic like me this is a torture..omg they look soo yummy-licious!The problem is I’m trying to control my addiction..it”s been 2 months I’m on a “no choco no nutella” diet..lol!!but on the 25th of October I was a naughty girl,couldn’t not eat my B.day choco cake!anyway I want to make these heavenly bites but the problem is I like to make my cakes from scratch I don’t like to use ready fudge..etc.. ..and here in Cyprus I don’t even know if I could find that..pls any recipes for the fudge??Thank U!!

      Hi there! You could always make the brownies from scratch, bake them, and cut them into squares to fit around the cookie dough!

    I am a VERY PETITE lady and it takes me and others by surprise — I have had terribly uncontrollable and obnoxious sneezes since I was young. Was very embarrassing as a child. Now I am more used to it, but like someone else said above, Maybe these wonderful cookie dough bombs will make up for any downside to our day! 🙂

    Amazing recipe, thank you! I have been looking for great no bake recipes because I am working with only a very small toaster oven and that kind of limits what I can bake.
    Would have preferred the recipe with a little less judgement of others though. I don’t understand the relevance of the sneeze story to these brownie balls, and there is no need to make others feel bad for something they clearly can’t control.

      CandiQuik is a candy coating chocolate that has a higher melting point than regular chocolate. If you can’t find it in the UK, feel free to substitute with a high quality chocolate bar and melt it slowly 🙂

    Sorry to disappoint you, but I have never been able to control the volume or intensity of my sneezes. They do what they want.

    Probably trying these bombs soon. Chocolate chip cookie dough is my favorite thing in the world pretty much.

    These look delicious! In the pictures, it looks like the bottom layer of brownie is a bit thinner than the top layer. Do you split the brownie bites in half?

      Hi Louise! If it helps, I often find the brownie bites at Walmart in their bakery section, or at Target by their cupcakes. As for brown sugar, either works! Dark will produce a deeper, richer flavor, but I used light here. Use what you have on hand! 🙂

    I bake my brownie bites in the wilton silicone brownie pan. I pressed a scoop of the cough into the same pan so I ended up with a cube stack–very elegant! Also very delicious and not very hard! I know the way I did it didn’t save on the oven but I didn’t like the idea of smushing a brownie around dough–I was thinking sticky mess (albeit a delicious one!) so I liked this sandwich way better.

      Hi Arlene! CandiQuik is a chocolate candy coating sold on the baking aisle at most stores. It has a higher melting point so it’s less susceptible to scorching like chocolate chips do. CandiQuik is one brand of candy coating – there are also candy coating brands called Plymouth Pantry, Palmer’s, LogHouse Foods, and even Ghirardelli makes a chocolate candy coating wafer!

    You have lots of non-American readers.

    Why not show us all how to make such delights from scratch, instead of assembling pre-made commercial items with lots of HFCS content. I would cheerfully make my own version of Brownie Bites, or even assemble the whole thing as a sheet-cake type of production, cut that into squares, then gently roll them into rounds.

    And then comes the Chocolate/Ganache coating process, Ohhhhh, highly hazardous in a household with Terminal Chocoholics residing 🙂

    Oh, and we tend not to enthuse over high peanut butter content as well

    Hayley!!!!!!!!! i need you to create a recipe i made!! called white chocolate lava cakes!!!! literaly what you do is make a normal lava cake,but with vanilla instead of chocolate. then you melt white chocolate for the middle and douse the whole cake in dark chocolate and sprinkle powdered sugar on it!!! thx and btw love your brownie bombs!!! they are still in the freezer but then i can eat it! but they are sooo easy and fun to make!!!
