Triple Berry Lemon Waffles

four triple berry waffles stacked on a patterned plateThese Triple Berry Lemon Waffles are insanely delicious! Packed with bright and zesty lemon flavor and juicy berries, they’re a cinch to make for breakfast or dessert!

One of my favorite childhood memories would be going to a local café on a weekend morning with my family and ordering Belgian-style waffles. I would always get a waffle loaded with fruit toppings – usually either apple or berry – and savor every sweet, fluffy bite. Besides freezer waffles, I had no idea how easy it was to make homemade waffles in the comfort of my own kitchen.

It wasn’t until I was much older that I finally bought myself a waffle iron. I was so excited to try out waffle recipes, but the one I’d always come back to involved Krusteaz because, let’s face it, they’re the experts in perfectly fluffy waffles every single time!

four triple berry lemon waffles stacked in front of a box of Krusteaz buttermilk pancake mixWhile you could make waffles with waffle mix, did you know you can also use pancake mix to make equally delicious waffles in your waffle iron? For this recipe, I used Krusteaz Buttermilk Pancake Mix to make supremely fluffy, ultra delicious Triple Berry Lemon Waffles. I had the Krusteaz Buttermilk Pancake Mix on hand, so I just used that and it worked like a charm!

Simply combine the basic ingredients: Krusteaz Buttermilk Pancake Mix, water, an egg, and some oil and stir in some fresh lemon juice and the zest of a lemon for a bright, zippy citrus flavor. Just before scooping the batter onto the hot waffle iron, lightly stir in berries. For this, I used blueberries, halved blackberries, and halved raspberries, but any berry combination will work!

close up of stacked waffles with powdered sugar on themAs the waffle batter cooks on the sizzling iron, the berries will pop and bubble up as the sugars in them caramelizes. This leads to colorful bursts of fresh berry in every bite! These zesty lemon waffles combined with pops of juicy berries is perfect for serving anytime, but I’m especially partial to a giant stack of these for dinner, as breakfast for dinner is one of my all-time favorites!
