Instructions
Preheat your oven to 350° degrees F. Line a 9x13 rectangular light metal baking pan with foil, extending the sides of the foil over the edges of the pan. Spray the foil with cooking spray and set aside.
First, make your cookie dough layer. In the bowl of a stand mixer, cream together the butter and sugars with the paddle attachment until creamy and smooth, about 1 minute. Add in the egg and egg yolk, beating well after each addition, followed by the vanilla extract. Lastly, add in the baking soda, cornstarch, salt, and flour and mix well. Stir in the chocolate chips by hand.
Spoon the dough into the prepared pan and press it into an even layer with your hands. Top with the Oreos in a grid pattern (6 rows of 4 Oreos per row for a total of 24 Oreos). Set aside.
Meanwhile, for the brownies: In a medium saucepan, melt together the butter and chopped chocolate bar over medium-low heat, stirring until melted. Remove from the heat and let stand for 5 minutes, then stir in the granulated sugar and beat well. Add in the eggs, mixing quickly, followed by the vanilla extract. Lastly, add in the flour, cocoa powder and salt and mix to combine.
Pour the brownie batter evenly over the Oreo layer and try to spread the brownie batter to the edges of the pan to cover the Oreo layer completely.
Bake for 35-45 minutes or until a toothpick inserted near the center comes out clean or with moist, but not wet. crumbs. Cool the bars in the pan completely before cutting into squares to serve.
