Ingredients
10medium-size butter croissantsslightly stale is best but fresh will work
1/2cup(1 stick) unsalted buttersoftened
1/2cupgranulated white sugar
2tspground cinnamon
For the Topping:
1/2cup(1 stick) unsalted buttersoftened
1/2cupgranulated white sugar
2tspground cinnamon
Instructions
Preheat oven to 350° degrees F. Line a large rimmed baking sheet with parchment paper or foil. Meanwhile, butterfly each croissant like a book but keep the two sides connected. Set aside.
For the filling: In a small bowl, combine the softened butter, granulated sugar and cinnamon together until it forms a paste. Spread about 1 heaping Tablespoonful of this mixture onto both sides of the croissant. Close the croissant halves together; set on the rimmed baking sheet.
For the topping: In a small bowl, whisk together the granulated sugar and cinnamon. Spread about 1 Tablespoon of softened butter on top of each croissant. Top with about 1-2 teaspoons of the cinnamon and sugar mixture, coating as liberally as possible.
Bake the croissants for 15-18 minutes or until tops appear dull and are set and crackly. Cool for about 15 minutes before serving (the filling will be very hot). These are best served the same day and taste amazing reheated in the microwave for about 10 seconds.
Notes
Make sure you are using real pastry croissants, not refrigerated crescent rolls. This works well with day-old, slightly stale croissants. To stale your croissants faster, simply butterfly them and place them on a baking sheet and leave out uncovered overnight.
