Trail Mix Energy Cookies

- 1/2 cup unsalted butter softened
- 1/2 cup creamy peanut butter if using natural, stir beforehand
- 3/4 cup brown sugar
- 1/4 cup granulated white sugar
- 2 large eggs
- 1 Tbsp vanilla extract
- 2 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 1½ cups all-purpose flour
- 1 cup old-fashioned oats
- 1/3 cup ground flaxseed meal
- 1/2 cup chia seeds
- 1½ cups trail mix most kinds will do, this particular mix I used had almonds, peanuts, M&M's and raisins
In the bowl of a stand mixer, cream together the butter and peanut butter with the paddle attachment until combined, about 1 minute. Beat in both sugars until well blended, followed by the eggs, one at a time, and then the vanilla. Add in the cornstarch, baking soda, salt and flour and beat until just barely combined. Lastly, stir in the oats, flaxseed meal, chia seeds and trail mix with a spoon or spatula until combined.
Cover and chill for at least 2 hours, up to overnight.
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone liners. Drop heaping 2-Tablespoon-size balls of dough onto the baking sheets, about 2" apart. Bake for approximately 12-14 minutes, rotating the pans halfway during the baking time to ensure even cooking. Cool completely on the baking sheets. *If cookies remain round after baking, gently flatten them with the bottom of a drinking glass.*
