Linda, I have made these 15-20 times, have used different types of apples, Gala, Jazz and Spartans in addition to Granny Smith, the firm the Apple the better if not they are also a little mushy.
I have also done them withLemon pie filling, Blueberry pie filling and cherry, you just need to cook the pie filling first, all were well received but Apple still seems to be # 1]]></description>

					<description><![CDATA[Ok, I do a lot of baking for a Tuesday morning coffe group for a bunch of seniors, these Apple crisp cups are far and away the most popular item I make. If I don&#039;t have them every 2nd or 3rd week (Variety is the spice of life) I&#039;m asked why.
I have been expeimenting by changing the filling, Lemon pie, Blue berry pie filling and cherry pie filling, all were very well received but Apple is still #1.
I would like to try doing these with a butter tart filling, any suggestions. I&#039;m thinking of cooking the BT filling in a sauce pan and just pour into the baked cookie cups???????

					<description><![CDATA[These cookies were a hit, I served them with vanilla ice cream. The cookie layer was soft and yummy. I baked for 18 mins, after letting them cool and pressing them I threw them back in to crisp a little bit longer. I think I should’ve done the initial bake for 20 mins. I added an extra 2 small apples the filling because I wanted a heaping amount of filling per cookie (4 apples total). Like with any oatmeal cookie, they’re sooooo good the next day because the fats are soaked up by the oats inside :)]]></description>
