Hi Heather! Humidity and heat can definitely affect the frosting sinking or falling flat. You can increase the amount of confectioners’ sugar to make it a little more stiff. Sometimes even running the dishwasher can bring up the humidity so when making delicate things like frosting I try to avoid running it. Hope this helps!

Hands down my favorite pumpkin cupcake recipe. Monthly I bake between 20-40 people’s worth of treats for Sheriff Deputies and they all loved this recipe.

The frosting ran flat for me. I did it exactly. I live in FL so it could have just been hot in my kitchen even though I set my air to 73 when baking. It was delicious though.
