Best One-Pot Rice Pudding

Ingredients

  • 3/4 cup medium-grain white rice sometimes known as Arborio rice
  • cups whole milk
  • 1/3 cup granulated white sugar
  • 1/4 teaspoon salt
  • 1 large egg lightly beaten
  • 2 teaspoons vanilla bean paste or substitute with vanilla extract
  • 3/4 cup raisins
  • 3 Tablespoons butter
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon ground cinnamon
  • Pinch nutmeg

Instructions

  • Add 1 & 1/2 cups of water to a large saucepan and bring to a boil over medium-high heat. Stir in the rice, reduce the heat to low, cover and simmer for 15-20 minutes until rice is fluffy, tender and cooked and water has evaporated.
  • To the same pot with the rice, add in the whole milk, sugar, and salt. Cook and stir over medium heat until thick and creamy, about 10-15 minutes. Working quickly and carefully, whisk in the beaten egg, vanilla bean paste and raisins and stir vigorously until egg is incorporated and mixture is smooth. Cook for 2-3 minutes longer. Lastly, add in the butter, condensed milk, and spices, stirring until combined, and cook for another 1-2 minutes more. Serve!
