Best One-Pot Rice Pudding

- 3/4 cup medium-grain white rice sometimes known as Arborio rice
- 1½ cups whole milk
- 1/3 cup granulated white sugar
- 1/4 teaspoon salt
- 1 large egg lightly beaten
- 2 teaspoons vanilla bean paste or substitute with vanilla extract
- 3/4 cup raisins
- 3 Tablespoons butter
- 1/2 cup sweetened condensed milk
- 1 teaspoon ground cinnamon
- Pinch nutmeg
Add 1 & 1/2 cups of water to a large saucepan and bring to a boil over medium-high heat. Stir in the rice, reduce the heat to low, cover and simmer for 15-20 minutes until rice is fluffy, tender and cooked and water has evaporated.
To the same pot with the rice, add in the whole milk, sugar, and salt. Cook and stir over medium heat until thick and creamy, about 10-15 minutes. Working quickly and carefully, whisk in the beaten egg, vanilla bean paste and raisins and stir vigorously until egg is incorporated and mixture is smooth. Cook for 2-3 minutes longer. Lastly, add in the butter, condensed milk, and spices, stirring until combined, and cook for another 1-2 minutes more. Serve!
