Oatmeal Creme Pie Caramelitas and a Surprise Virtual Baby Shower for Lisa!

The classic caramelitas recipe gets a fun twist with a surprise middle consisting of Oatmeal Creme Pies! You won't be able to pass up one of these irresistibly gooey bars.
Ingredients
  • ¾ cup butter, melted
  • 1 Tbsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 tsp baking soda
  • Pinch of salt
  • 1 jar caramel sundae sauce
  • 6 Oatmeal Creme Pies, unwrapped and roughly chopped
Instructions
  1. Preheat oven to 350 degrees F. Line an 8x8" pan with foil, extending the sides of the foil over the edges of the pan. Spray the foil liberally with cooking spray -- seriously, if you think you sprayed it enough, spray it again -- you will be sorry if you don't! Set the pan aside.
  2. In a large microwaveable bowl, combine the melted butter, vanilla extract, flour, oats, baking soda and salt until incorporated. The mixture will be thick.
  3. Press half of the mixture into the prepared pan -- it will be a very thin, flat layer -- this is okay. Bake the crust for 10 minutes; remove from oven.
  4. Sprinkle the chopped Oatmeal Creme Pies over the top of the crust. Pour the caramel sauce evenly over the chopped pies to cover. Break apart the remaining crust dough and sprinkle it evenly on top of the caramel layer, trying to cover the caramel layer as best as possible. There will be cracks and that's okay.
  5. Bake for approximately 15-18 minutes or until the top is golden brown and bubbly. Allow the pan to cool completely to room temperature before cutting into squares. I highly recommend waiting overnight for the bars to set up completely (you can even put them in the fridge to expedite this process) because otherwise they'll fall. Serve warmed or room temperature.
