Cinnamon Chocolate Owl Pops

These owl pops are a cinch to make and are perfect for any occasion, like Halloween, harvest parties, even back to school. And they have a rich cinnamon and chocolate Kahlua flavor that everyone will love.
Ingredients
  • 1 pkg chocolate bark or chocolate candy melts
  • 1 bottle (dram) Keoke Coffee flavoring
  • ½ tsp cinnamon
Instructions
  1. Melt the chocolate in a medium bowl in the microwave until smooth. I like to melt mine in 30 second increments to prevent scorching.
  2. Once smooth, stir in one capful of Keoke coffee flavoring and the cinnamon. Be warned: the flavoring oil is VERY strong, so a little really does go a LONG way!
  3. Pour the chocolate mixture evenly into the molds; tap the molds gently on the counter to remove any air bubbles and smooth out the backs. Place a lollipop stick in the designated slot for the pops.
  4. Allow the pops to set-- you can pop them in the freezer for a few minutes to speed up the process--before removing them carefully. Repeat with remaining chocolate.
  5. Once pops have set, brush them with the Luster Dust. I used a small paintbrush you can find at the dollar store and brushed the dust onto their bellies and ears. Using some of the remaining chocolate in the bowl, place a dab of chocolate on the flat part of a royal icing eyeball and attach it to the owl.
  6. For things like beaks, I used small orange-colored heart sprinkles turned upside down. You could also trace around the eye area and sprinkle brown or gold sprinkles for "eyebrows", like in my pictures. Or use larger gold/yellow round quins to put down first, then attach the eyeball to for that classic owl wide-eyed look.
