Blueberry Pie Egg Rolls and Lucky Leaf "Good Things Come to Those Who Pin!" Contest

Give blueberry pie a new, inventive life by egg-rollin' it!
Ingredients
  • 1 pkg egg roll wrappers (you'll need about 12-16)
  • 1 (21 oz) can Lucky Leaf Premium Blueberry Pie Filling
  • About ⅓ cup white chocolate chips, optional
  • Cinnamon sugar (mix 1 tsp ground cinnamon into ½ cup white sugar)
Instructions
  1. Heat a large skillet on medium heat with about 2" or about 1 cup of oil.
  2. On a clean, flat work surface, place one egg roll wrapper in a diamond pattern facing you. Take a heaping Tablespoon of pie filling and place it in the center of the diamond in a small pile. Sprinkle the pie filling with a couple white chocolate chips, if you'd like.
  3. Fold the bottom diamond over the filling, tucking it in slightly. Moisten the sides of the wrapper with a little water, then fold them in, pressing gently to adhere. Finally, moisten the final top point with water and roll the egg roll up, gently sealing it.
  4. When the oil is hot, drop the egg rolls and fry until golden, about 2-3 minutes per side. Remove the egg rolls with tongs onto a paper-towel-lined plate to drain and sprinkle immediately with cinnamon sugar. Serve immediately as is, or top with whipped cream and remaining pie filling, or ice cream.
