This is now my absolute favorite quick bread recipe!! I made pumpkin spice using cinnamon, ground ginger, nutmeg, allspice, cloves, and cardamom, and it’s so yummy! I’ve already made a variation with extra zucchini in lieu of carrots (because I have a glut of zucchini right now) and it was delicious. I’m looking forward to making this through autumn and winter. Thank you for an excellent recipe! I love how simple this was to make and it tastes amazing. I substituted vegetable shortening in place of butter only because I was out of unsalted and the sub worked out very well. I appreciate the note on not over mixing the ingredients. This bread came out fluffy and delicious. I will definitely make this one again for certain
