					<description><![CDATA[I am from the south where my Mom made this every Christmas.  We had to wait for a dry, sunny day with low humidity for it to work.  She hand beat her divinity but I can’t do that.  I have a KitchenAid mixer that works great.  I have made this in the South and in high altitude areas in the northwest.  If you live in high altitude area, it is much easier and quicker to make.    Divinity  and sea form candies are two different candies.  My Mom made a batch with out pecans  and a batch with pecans, the pecans were stirred in at the last moment.   When I made this in Florida, I turned on the oven to heat up and dry out the kitchen and started to work on it at 11:30 - low humidity for 1 1/2 hour..  I did not run the dishwasher or wash clothes during the morning time.]]></description>

					<description><![CDATA[People whose efforts failed might have missed out on a fact of candy-making that gets overlooked all of the time. The stages and temperatures needed to make the candy are marked on a candy thermometer for temperatures AT SEA LEVEL. For every 1,000 feet of elevation, you have to reduce the temperature 2 degrees Fahrenheit. I live at almost 6,000 feet near Lake Arrowhead, CA in the San Bernardino National Forest, so water boiling at 212 degrees at level boils here at 200 degrees F.

Another tip: The temperature markings on a candy thermometer are difficult to see, especially when stirring a boiling candy syrup that wants to take the flesh off your hand. Once you figure out the proper temperature at your elevation, use a meat thermometer -- the degrees markings are a LOT easier to read. That trick I knew thirty years ago and have used ever since.]]></description>

My  grandmother taught me how to make it, here in Templeton, California. She grew up in Binger, Oklahoma and her grandmother taught her. I wish I had a daughter or granddaughter to teach how to make it, and hand the recipe down too. I always make it at Christmas time in remberance of of her. She always said the humidity was really important when making it. She would say never make it on a Foggy or rainy day, inless I wanted taffy. I&#039;ve always listened to those words and it&#039;s turned out great! Everything my sister has tried,  not so great, it turns out taffy, so I make her a small gift box of it for Christmas. It&#039;s my very favorite candy and hers too!!]]></description>
