Hi Corna, apologies in the delay in my reply. Coconut milk tends to be a little runnier than sweetened condensed milk so I am not sure if the recipe would still have the structure to hold up while baking. You could try doing half and half, or try using cream of coconut which is a bit more dense and thicker.

Just wondering: what if I substitute 1can of coconut milk to the 1 can of condensed milk? Would it make a big difference? Maybe then I should add some more sugar?

(I have got lots of cans of coconut milk and no idea on how to use them!!)

Susan here again…I googled freezing macaroons and you can. Just cool completely and put in an airtight container. Good for one month.

Just made my macaroons and they came out perfect and delicious. I saw where someone asked if they could be frozen. Did you ever receive a message back from that person to see if she froze them and if they were still yummy?
