The nice folks at Stonewall Kitchen decided to pamper lil ol’ me and send me a sweet care package of their newest and upcoming products that I am SO excited to share with you today. I opened my box to find their Chocolate & Vanilla Shortbread Mix, their Spicy Mexican Chocolate Sauce, and their Barbeque Ketchup. In fact, their Chocolate & Vanilla Shortbread Mix is a holiday product that isn’t even on the shelves yet — lucky me! 🙂

Since the Barbeque Ketchup isn’t dessert-y, I reserved this smoky-sweet sauce exclusively for my French fries and hamburgers. But I did combine the Spicy Mexican Chocolate Sauce and the Shortbread Mix to create one seriously DELISH cookie sandwich. It’s the perfect combination of sweet and heat. The Mexican Chocolate Sauce isn’t shy — there’s definitely a kick from the cayenne pepper, but it’s blended effortlessly into the smooth, thick fudge sauce offering a great bite and such a complex complement to the richness of the fudge. And the Shortbread Mix couldn’t be simpler to prepare — and produces gorgeous, spiralized chocolate & vanilla shortbread cookies that are soft in the middle, crisp on the outer edges, and oh so tender & buttery.
- 1 box Stonewall Kitchen Chocolate & Vanilla Shortbread Mix, plus ingredients on back of box
- 1 jar Stonewall Kitchen Spicy Mexican Chocolate Sauce
- 2 Tbsp heavy cream
- 2 cups powdered sugar
- Chocolate sprinkles, for rimming the cookies
- Prepare and bake the chocolate & vanilla shortbread cookies according to package directions; cool completely.
- Meanwhile, in the bowl of a stand mixer, combine the Spicy Mexican Chocolate Sauce, the cream and powdered sugar together with the paddle attachment. Frosting should be light and fluffy. If too runny, add more powdered sugar; if too stiff, add a splash of cream.
- Spread or pipe frosting onto one side of a cookie; sandwich with another cookie to create a sandwich. Roll the edges in chocolate sprinkles and serve!
Usually I’m a little wimpy when it comes to sweet & heat — I like spicy foods and I like desserts, but not necessarily together. However, this sauce was so decadent, irresistible and addictive — I could NOT stop spooning it into my mouth! I love that the heat creeps up on your afterward. The first bite is that sinful, thick fudge sauce and then the little sizzle from the cayenne. Paired with the buttery, crisp cookies, this is a match made in heaven, thanks to Stonewall Kitchen!!
