24 Summer Fun Recipes



Hey, little busybees!

Summer is in FULL swing here in Sacramento, and judging by the news and the over-usage of a sun wearing sunglasses graphic plastered throughout the United States, everyone is feeling the heat!

I know that with heat comes lack of motivation to do, well, anything (except for drinking pina coladas in the pool), but sometimes parties spring up (there are a LOT of summer birthdays, am I right?!) and potlucks or barbeques.  With that usually comes the courteous obligation to bring along some kind of a dish, and for me, it’s always dessert!  Sometimes I like whipping up easy, no-bake treats, but other times I actually feel like bearing the oven’s heat and making something fun… especially if I can bake in their air conditioning!

So here is a little roundup of fun, summer-themed recipes that are EASY to make!  Some do require ovens, but luckily not everyone in the world is suffering through heat stroke (and can bear to bake a cake!), and other recipes are conveniently no-bake.  However, ALL of them are completely delicious!




Cake Batter Cookie Dough Truffles: all the taste of cake batter in a chilly cookie dough truffle!
Inside-Out Oreo Peanut Butter Cups: these tasty treats are like peanut butter cups reversed!–and with a fun cookie crunch inside.



Banana Split Poke Cake: the PERFECT summertime cake! Tastes just like a banana split and is served straight from the fridge, nice and cold!
Mini Ice Cream Cone Cake Pops: petite little cake pops that look just like ice cream cones! These would be fun to decorate with the kids in the AC!



Skinny Cannoli Cones: craving a cannoli but not the struggle from making them from scratch? Sugar cones are the perfect alternative to that pesky cannoli shell and offer a nice, creamy alternative to ice cream.
Banana Cream Pie Minis: adorable, miniature pies with creamy banana flavor.  Mini things have zero calories — fact.



Drumstick Cupcakes: I LOVE eating Drumsticks in the summertime, and these adorable cupcakes are a fun little spin on that classic treat.
Lemon Cheesecake Bars: Lemon desserts will always be my favorite, and these gooey, creamy cheesecake bars are so refreshing!



Cotton Candy Meringues: summertime always reminds me of carnivals, and these cotton candy meringues evoke that fun, fearless vibe.  They’re surprisingly EASY to make!!
Mint Chip Cupcakes: if you’re a lover of mint chip ice cream, you’ll flip for these cupcakes!  The frosting is to-die for!



Red Licorice Cupcakes: to this day, this is one of my favorite recipes since I am a huge lover of red licorice!!  Take these bad boys to a late-night showing at the local drive-in 🙂
Chunky Monkey Truffles: these are excellent straight from the freezer!



Peppermint Bark Ice Cream: at a local ice cream parlor, I love getting peppermint hot fudge sundaes on hot summer nights.  Nothing’s more refreshing and invigorating than peppermint!  This ice cream is really simple to make!
Circus Animal Cookie Truffles: hello, these are just plain awesome.



Pineapple Right-Side Up Cupcakes: there’s something so cute about these cherry-topped, pineapple-infused golden cakes.  Cute AND tasty!
Peanut Butter & Jelly PopTart Ice Cream Sandwiches: a delicious mouthful!  Plus, the flavor combinations are versatile if PB&J ain’t yo thang.



No Bake S’mores Bars: these would be awesome little snacks to bring along for camping trips!  Just like tasty, gooey s’mores but without the flame OR the mess.
Lite Triple Coconut Cupcakes: my favorite cupcake recipe EVER.  These are INSANE!!



Twinkie Strawberry Shortcake: use up those golden snack cakes in an inventive way by making this luscious shortcake!
Skinny Funfetti Dip: here’s the skinny, folks.  It’s bikini season, but cake cravings are seasonless.  Eat this dip instead–lighter in calories but huge on flavor! Extra sprinkles, please!



Peanut Butter & Jelly Twinkies: so some may say kids are burnt out on PBJs, but I say “NEVER!”  I love PBJs anytime of day, everyday if I could!  These Twinkies are a fun twist to the classic spongecake.
Snickerdoodle Ice Cream: oh my doodles.  You must try this!



Rainbow Mini Cheesecakes: bright, playful and fun, these cheesecakes are fun to make with the kids and will totally WOW guests at birthday parties and BBQs!
Watermelon Cupcakes: one of my pet peeves are cupcakes that look like watermelon, but don’t have that same amazing taste!  These cupcakes not only resemble watermelons on the outside, but they TASTE like watermelon on the inside!  The frosting is SO good!

Well, there you have it! Sunblock up, turn on the AC, and get baking!
