Cinco de Mayo is one of my favorite holidays, and probably not for the reason it traditionally should be, but basically because it’s a reason to inhale every crumb of Mexican food in sight guiltlessly.
Everyone knows that holiday calories don’t count, and Cinco de Mayo is best celebrated while stuffing your face with enchiladas, copious amounts of guacamole, unlimited salty tortilla chips and LOTS of pico. And then, of course, dessert.
