Blueberry Pie Egg Rolls

blueberry pie eggrollsPleeeease tell me I’m not the only one spending 87% of my day on Pinterest? Because it really explains my lack of friends and funds yet overwhelming increase in wanting to make my own Febreeze or figuring out what the heck a ‘Paleo’ diet means without thinking of dinosaurs.

As a food blogger, it’s kinda sorta in my job description to be on Pinterest for a good chunk of time. Hellllooooo, it’s networking, market research, brand expansion… totally important business-y reasons. And while Pinterest hasn’t added me to their payroll (yet–call me, P!), wouldn’t it be super awesome to get free swag or win money from pinning? (If you said ‘no’, you should probably not be on this blog).

So when Lucky Leaf contacted me about their new Good Things Come to Those Who Pin contest, I just haaaad to participate! There are 13 chances to win awesome stuff, including the grand prize of $500 bucks to spend on anything your little heart desires, or other prizes like $200 or sweet Lucky Leaf gift packs! And if you spend the majority of your day on Pinterest anyway, what have you got to lose?!

I don’t know about you, but I LOVE me some pie and simply adore their pie fillings! For one, there’s no high fructose corn syrup — they’re all-natural, baby! — and the 21 ounce-cans are packed with fresh, delicious fruit pie filling, like cherry, blueberry, or apple to name a few. Every bite tastes fresh-picked and not at all artificial or processed tasting. It’s the worst when your pie filling tastes tinny, but Lucky Leaf has superior flavor to their competition. You can’t go wrong!

And when thinking of creating a recipe using the Lucky Leaf Premium filling, I didn’t want to go with a standard single-or-double-crust pie. I wanted a recipe as fresh and superior just like the fruit that’d be stuffed inside, so I created Blueberry Pie Egg Rolls using the Lucky Leaf Premium Blueberry filling.

Blueberry Pie Egg Rolls and Lucky Leaf "Good Things Come to Those Who Pin!" Contest

Serves: 12-16
 
Give blueberry pie a new, inventive life by egg-rollin' it!
Ingredients
  • 1 pkg egg roll wrappers (you'll need about 12-16)
  • 1 (21 oz) can Lucky Leaf Premium Blueberry Pie Filling
  • About ⅓ cup white chocolate chips, optional
  • Cinnamon sugar (mix 1 tsp ground cinnamon into ½ cup white sugar)
Instructions
  1. Heat a large skillet on medium heat with about 2" or about 1 cup of oil.
  2. On a clean, flat work surface, place one egg roll wrapper in a diamond pattern facing you. Take a heaping Tablespoon of pie filling and place it in the center of the diamond in a small pile. Sprinkle the pie filling with a couple white chocolate chips, if you'd like.
  3. Fold the bottom diamond over the filling, tucking it in slightly. Moisten the sides of the wrapper with a little water, then fold them in, pressing gently to adhere. Finally, moisten the final top point with water and roll the egg roll up, gently sealing it.
  4. When the oil is hot, drop the egg rolls and fry until golden, about 2-3 minutes per side. Remove the egg rolls with tongs onto a paper-towel-lined plate to drain and sprinkle immediately with cinnamon sugar. Serve immediately as is, or top with whipped cream and remaining pie filling, or ice cream.

blueberry pie eggrollsThis is THEEE new way to eat pie, people! A handheld pie deep-fried and smothered in a blanket of crispy cinnamon sugar = totally perfect. The pie filling inside is so gooey and warm, and the egg roll wrapper mimics the traditional buttery, flaky crust of a pie. These taste SO awesome loaded with the remaining pie filling and topped with tons of whipped cream! Totally pinworthy 🙂

    So with you on the paleo diet. And increasingly wanting to make my own cleaning products.. but hate cleaning!! Wish I could get pie filling like this in the UK. Maybe I can order it online for my confused english girl feature 🙂

    yummm — these pie egg rolls sound amazing! I don’t really like blueberry pie, but something about when the filling is in not-pie makes me like it. (like swirled into ice cream? epic)

    I’m kind of obsessed with pie filling…that’s weird, right? I can eat it with a spoon, like a weirdo. Especially cherry, but blueberry is great too! 🙂 I love your creative egg roll ideas!

    You know you did those strawberry shortcake eggrolls a few weeks ago and I was in love with them but I’m even more in love with these! I have a similar recipe that’s been in my drafts for a month because it’s too rainy to get a decent photo of anything. Boo. If you figure out how to get on Pinterest’s payroll then help a sister out, would ya?
