Mexican Hot Fudge Cookie Sandwiches {And A Stonewall Kitchen GIVEAWAY!}

These sweet and hot cookie sandwiches are made of a tender, buttery shortbread cookie sandwiched around a Mexican fudge frosting that's sweet and hot. Delicious!
Ingredients
  • 1 box Stonewall Kitchen Chocolate & Vanilla Shortbread Mix, plus ingredients on back of box
  • 1 jar Stonewall Kitchen Spicy Mexican Chocolate Sauce
  • 2 Tbsp heavy cream
  • 2 cups powdered sugar
  • Chocolate sprinkles, for rimming the cookies
Instructions
  1. Prepare and bake the chocolate & vanilla shortbread cookies according to package directions; cool completely.
  2. Meanwhile, in the bowl of a stand mixer, combine the Spicy Mexican Chocolate Sauce, the cream and powdered sugar together with the paddle attachment. Frosting should be light and fluffy. If too runny, add more powdered sugar; if too stiff, add a splash of cream.
  3. Spread or pipe frosting onto one side of a cookie; sandwich with another cookie to create a sandwich. Roll the edges in chocolate sprinkles and serve!
