So if you can believe it, I’m all done with my Christmas shopping.
This happens every year. I get so excited about Christmas coming up that I freak out and snap and buy ALL THE THINGS for Christmas.
Aaaaaand now I’m done shopping. Like, totally forreals done.
But you know what will inevitably happen? I’ll forget all the stuff I bought, even after writing it down, and will continue to buy more things for my family and friends until Christmas Eve. It happens every year and it’s like a disease I can’t heal from. MUST BUY ALL THE THINGS.
Is anyone else like me and has all their shopping done?
And meanwhile I’m over here begging my family to let me decorate for Christmas, but they’re all, “it’s too early.. wait until after Thanksgiving” and I’m all “you’re crushing my dreams and will to live!” It’s like they just don’t comprehend the fact that Christmas is coming and I have to decorate my entire house like a freakin’ winter wonderland.
Yes, I have mental issues. You don’t need to tell me.
First, I suppose, we should acknowledge Thanksgiving and for that I’ve decided I’m making this Butterscotch Pie. It’s perfect for the upcoming holiday because it’s no-bake (yay for oven space!), it can be prepared a day in advance, and it’s so light and luscious and bursting with that rich, sweet butterscotch flavor.
Be warned, however, that this is only for serious butterscotch lovers! It’s made with a butterscotch base, topped with whipped cream, and is loaded with butterscotch sauce and chips surrounding the top of the pie for the ultimate butterscotch experience. Butterscotch, butterscotch, butterscotch… say that five times fast 🙂
Now make this pie! And convince my family to let me decorate, please?
Butterscotch Pie
Ingredients
- 1 graham cracker pie crust
- 1 (3.4 oz box) instant butterscotch pudding mix
- 2 cups milk
- 1 (8 oz tub) Cool Whip, thawed
- 1/4 cup butterscotch sundae sauce
- 1/2 cup butterscotch chips
Instructions
- In a large bowl, whisk together the box of butterscotch pudding mix and the 2 cups of milk until blended. Let stand for five minutes, then add HALF of the Cool Whip and fold into the pudding mixture until combined. Pour into the prepared pie crust.
- Gently spread the remaining Cool Whip over the top of the pie and garnish the trim with the butterscotch chips. Refrigerate for at least 1 hour before serving.
- Just before serving, drizzle with butterscotch sundae sauce. Store leftovers in the fridge.
Easy, made in minutes and totally scrumptious, this Butterscotch Pie will steal the show at Thanksgiving, I guarantee it!
Have a super sweet day!
xo, Hayley

Oh my gosh, you finished your shopping? I’m dying inside. I haven’t bought a thing! You’re killing me with your gorgeous pictures. Can you just solve all my problems and come over and take all my pictures? This pie looks heavenly. No-bake is perfect for Thanksgiving. I do need to think about oven space!

Don’t feel bad, Michele – I swear I’m an anomaly and am super weird for finishing xmas shopping early. Not to worry, you have plenty of time! 🙂
Tammy says
Just be aware, in the actual recipe it states 1 box of pudding. In the instructions it states 2…more than likely its two…
thedomesticrebel says
Hi Tammy, I apologize for the confusion! The recipe was originally written to use two small boxes, but I had updated it to use 1 larger box but forgot to change the directions. I fixed the recipe card.
Kayle (The Cooking Actress) says
omigosh the texture of this pie! Looooove!
and girl, I love getting my christmas shopping done early! Totally lagging this year, though, because we cannot figure out what to get some people!
thedomesticrebel says
Ha, thankfully I knew exactly what to get everyone!
Liz says
Hey, if you’re still in the mood, I’m happy to pass along my shopping list. Well, maybe I need to start the Xmas list. BTW, your pie looks amazing!!!
thedomesticrebel says
I’m happy to do your shopping for ya, Liz! 😉

Used to be so good that even with 4 kids,Shopping was done by Halloween! When my girls were little, stashed stuff I bought all year off clearance racks, plus had stuff for birthday parties, etc. Then was real sick for like 4years and Christmas was just another day. Last year, was the first year I did all of the shopping. 95 percent of the gifts were from Groupon! I don’t drive and was still semi bedridden, was so excited. Hubby wasn’t when he got the credit card bill!! This year, hmm. May use some of the crafty homemade ideas from all the bloggy goddesses! Also used to have a different themed tree in nearly every room. Now,.. 1 way cool tree can work. Oh, the pressures you young ones put on yourselves! Think I thrived on all of that. A mom thing. Go easy girlfriends, enjoy and savor ?
thedomesticrebel says
Thanks Teri! 🙂 Merry (early) Christmas to you and your family!
Dorothy @ Crazy for Crust says
EEK I’ve barely started shopping and it’s stressing me out!! I need pie.
thedomesticrebel says
It’s okay; I’m the anomaly here! 🙂
Kait says
Yum!! This looks sooo good! Can I use homemade whipped cream instead of cool whip? Or will it mess up the consistency
thedomesticrebel says
Hi Kait! Yes, that should work!
Melinda says
IT says two cups milk but pudding needs two for one box am I sapose to use just two or four all together
thedomesticrebel says
Hi Melinda, two cups total!
Grace says
Would that be 2 small boxes of butterscotch instant pudding or 2 larger boxes?
thedomesticrebel says
Hi Grace! Thanks for pointing that out – I’m fixing it now. It’s two small boxes (1 oz each). If you only have the large boxes (3.4-3.9 oz each) those will work too. 🙂
Terri says
If you use the bigger boxes I.e. 3.5 oz, do you use 1 or two for f those boxes with the 2 cups milk?
Terri says
1 or 2 of* the bigger boxes
thedomesticrebel says
Hi Terri, my apologies that it wasn’t super clear. I’m fixing it now, but basically you’ll use ONE box if you’re using the 3.5 ounce size, or TWO of the 1 ounce sized boxes. The smaller boxes are sugar free/fat free, so you usually need more. Two cups milk for either situation. 🙂 Hope this helps!
Terri says
Yes, thanks! Gonna try it tonight!
Teresa says
I must be whack-a-doo because I really don’t think I’e EVER seen a 1 oz box of jello!! I swear! And…..we don’t have a 3.5 oz box here in Ohio either. It’s 3.4 oz and then there is a 6 oz size. hahahahahah
Leonor says
Mine was really runny… it never really firmed up in the fridge. What did I do wrong? Did I not fold the whip cream correctly. i used whole milk also. was that the issue?
thedomesticrebel says
Hi Leonor, I wonder if you used cook and serve pudding instead of instant pudding by accident? This is a very common mistake!
