Funfetti Piewiches–Guest Post from Crazy For Crust!

Hey y’all!

So, good news! Dorothy from Crazy For Crust is posting for me today! If you didn’t already know, Dorothy and I are real-life neighbors and BFFs… and it’s awesome. We make each other cocktails, treat-swap constantly and take walks together on Sundays. Plus, she makes stuff like Blueberry Pie Fudge, Monster Magic 7-Layer Bars and (one of my personal faves!) Almond Joy Pudding Cookies. She’s totally rad and I love her mucho for many reasons, including posting for me today. So, without further adieu, Dorothy, take the floor!

Hi everyone! I’m Dorothy, from Crazy for Crust, where I make you fat with sugar and then talk your ear off about my life and love of crust.

I am so super excited that Hayley asked me to guest post for her today. You see, the two of us have been blogging for awhile now and up until this past winter, we had no idea we were taking the internets by storm only a few blocks away from each other. Yep, we’re neighbors. And when I say neighbor, I literally mean it; her house is on my run route. {It totally was my running path before I started stalking her, pinky swear.}

And, once we met, we totally became real-life BFFs as well as online blogger buds. We’ve even shared midori lemonades whilst laughing and judging those women of the OC.

Every time I open up Hayley’s blog, I know I’m gonna get something good. Like Drumstick Cupcakes. Or Almond Joy Blondie Bars. Or, one of my personal fans, Funfetti Cheesecake Bars. (FYI, I’ve tasted those cheesecake bars. So. Damn. Good.)

If there is one thing that is apparent when you spend some time with Hayley is that she likes cake mix. And she loves Funfetti.

In fact, I have christened her “Queen of Cake Mix.” If I had my way, I’d throw her a party with glitter and pie and cupcakes galore and make her a cape made of sprinkles and a crown made of rainbows.

So…back to Funfetti Piewiches.

{Yes, I know. I tend to ramble. Welcome to the inside of my head where the voices fight and the one with the most pie wins.}

I have a thing with crust. A love affair, you could say. As in, I love it. Lots. My sole purpose in life is to make every single dessert I can think of…and put a crust on it.

Today’s version of my goal is a cookie sandwich. But instead of cookies, I used pie crust. And the filling is a funfetti explosion of cake batter and cheesecake flavor. And even better – I invented a word. {What? Google “piewich” and stuff comes up? Darn Google. Let’s just pretend then, mmkay?}

These are way, way too easy to make and eat. (Believe me. And you may not want to eat the whole batch in one day? Just sayin’.)

If you love crust as much as I do, then these are for you. If you don’t? Well. I’m not sure what to say to that except maybe try? For me? Because if you come visit me I’ll make you some crust and then I’ll tell you about my love of Dairy Queen.

Funfetti Piewiches

by Crazy for Crust

Ingredients:

  • 1 refrigerated pie crust (from a pack of two), unrolled
  • 1 tablespoon butter, melted
  • Sprinkles
  • 1/2 block cream cheese (4 ounces), at room temperature
  • 1 cup funfetti cake mix (dry)
  • 1 1/4 cup Cool Whip

Directions:

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  2. Use a cookie cutter to cut circles from the pie crust, re-rolling as needed. (Depending on the size of the cookie cutter, you will get about 20-24 rounds.) Place on cookie sheet and brush lightly with melted butter. Sprinkle with sprinkles. Bake until slightly golden, about 8 minutes. **This can also be done in your toaster oven.** Cool before filling.
  3. While pie crust rounds are cooling, mix cream cheese, cake mix, and Cool Whip with a hand mixer. Spread filling on half of pie crust rounds and top with remaining crusts. Serve up with more sprinkles, because more sprinkles is always better. Store in refrigerator.
